Just to make this a bit clearer, this functionality already exists (for
clickatell anyway).  The steps to do it are as follows:

SMS Messaging -> Gateways -> Edit Clickatell config -> Update 'source
address' -> Save ->  Send message as normal -> Gateways -> Edit Clickatell
config -> reset 'source address' -> Save
