Default Identity was not filled in the options apparently but the sent-mail
folder was properly set.
I filled all fields in there and then it works now, it properly displays To
headers in the mail listing.

considering that IMP recognizes my sent-mail folder as the 'sent mail
folder' (it displays a 'To' column in the mail listing and it has a small
icon in the folder list), 
it should be able to display To headers, I do not see why it needs my full
names/emails in the options to be able to do that so it's still a bug ;)
