This should be doable both for single images via the image properties  
page (using a date picker) and in bulk from a gallery view by  
selecting multiple images and clicking a new action "Edit Dates" that  
will open a redbox-type window that will contain both a date picker  
control as well as fields to add or subtract a certain number of days  
from the current date - similar to how iPhoto does it.
