Re-thinking the whole story, why not just do as others and simply  
provide all known attributes on sending and use all provided when  
receiving? This way deleting of attributes would work and we don't  
have to bother if the client send its CAPs or not (Funambol does not  
for example). We could use provided capabilities to surpress potential  
large data like "photo" if the client does not support it anyway.
Any comments/thoughts if this is acceptable??
