Ok, thanks to xdebug I found out what's going on:

The Kolab_Storage backend wasn't using the new IMAP "server" configuration.
So the Kolab_Storage factory constructed the object with "host=NULL"  
and this reverted to localhost in the IMAP_Client.

What about the attached patch?
