What version of Red Hat?  And "rpm -q php-mcrypt" does show the php-mcrypt
RPM installed?

The latter just reflects how the base PHP RPM was "configure"d.  Have you
tried restarting Apache?  Double-check that "extension=mcrypt.so" is
present and uncommented in /etc/php.ini (the RPM installation should do
that for you, but just in case...).  Look at the phpinfo() output and see
if the "mcrypt" section is showing up?
