In the folders menu, click on the folders you want info for, and then select
the appropriate option from the drop down menu at the top (something like
"check folder for new mail" or what have you, not sure of exact wording).

You can also put an imp summary on the summary page and it will show the
folders you selected in the folders page of IMP.

Not that I know of.  It isn't on by default since it is a potential
performance hit (if you have lots of folders with lots of messages, etc).
