There is only the Information on the wiki 
http://wiki.horde.org/SyncHowTo but i got it running on a Nokia E90, 
most important information is:

# Client configuration is as follows:

     * The sync URL is http(s)://pathtoyourhordeinstall/rpc.php
           o User name/password: your Horde account data
           o Databases (sometimes called remote settings or server path) 
should be calendar, tasks, notes, and contacts, but common default 
values from the various clients may work too.

Create a new sync task, choose your connection point, what to sync with 
the correspondending database names and try.
Your connection between server and cellphone should already be setup and 
working. Test it with the build in webbrowser, you should be able to get 
the horde portal page.

The E90 can use SyncML 1.1 and 1.2 but i got it only working with 1.1. 
Dunno about E51. You should get the latest firmware for your cellphone. 
At least the E90 had a serious bug, limiting calendar to 6000 entrys. It 
got solved last year.


There is also a sync mailinglist, which is more appropriate for further 
questions.
