There are many links on Google for "migrating courier to cyrus".

If you have a small number of users, check out the program "imapsync".  If 
you have a large number of users, you'll want to script it.

Cyrus is a great IMAP server, but it is more complex as well.  Make sure 
you know what you are doing!
