Recently I sent this issue to the Nine developers. As of today this  
has been fixed. In Nine 1.5.1 "DisplayTo" is no longer ignored and  
recipients's names appear in the Sent mail folder. However, you have  
to resync the client so that older mails in the Sent folder already  
synced with your device show the names as well.

It seems that regular Exchange servers don't send "DisplayTo" and put  
the name in another field, since on a test account (outlook.com) this  
issue wasn't present. Perhaps that's why almost all clients ignore  
this field.
