I'll assume we're talking about IMP 2.2.x?  I believe what you want is
$default->use_server_list = true, and then configure config/servers.php3
with your list of domains.  If you want to assign them yourself, leave
$default->user_change_server = false, and define the $preferred field as
an array (see the "mail1.uibk.ac.at" example in config/servers.php3).

I have not done this personally but hopefully others will chime in with
more details.
