First off, you can only see what the IMAP server lets you see - the fact that 
UW basically puts the whole filesystem into the namespace is a UW issue. 
Second, with UW, you probably want the folders string to be just 'mail/' - that 
will put folders inside users' home directories, in a folder called mail/.
