I don't remember if you have mentioned this, but have you tried running 
sendmail with the proper arguments on the command-line and seeing if everything 
turns out ok?

Make an email file (test) which contains something like the following:

  From: me@here.com
  To: you@there.com
  Subject: testing sendmail

  This is only a test

And then send it with:

sendmail -i -t -fme@here.com -- you@there.com < test
