That is not supported. If you want to display something other than the
email address and the identity name in the select box you have to change
some code. I'm not sure where exactly the content of this list is set but
the only possible locations are compose.php and
templates/compose/compose.inc.

No, that (at least the sent mail feature) requires folders but that is not
supported by the pop3 protocol. You should instead think of moving to an
imap server. That would give you much more possibilities with imp.
