Another consideration is running the imap service as an xinetd driven  
process ( I believe this is the only way uw-imap runs)
dovecot just sits there and waits - so you don't incur setup and tear down
I have not scientific proof that a static program waiting for requests  
is more efficient than an xinetd service - it is just my intuition
