If each user has a personal address book, rooting it somewhere specific
to that user just makes sense.
I'm not certain what you mean by "trimmed down". An object with and
objectclass of inetOrgPerson MUST also have an objectclass of
organizationalPerson, person, and top in order to satisfy the chain of
descent.

No, modifying the provided schema files is a violation of the
standard. Only the owner of the schema (who possesses the OID) is
permitted to modify or extend schema.
