Perhaps this could help.

Leave c-client in the compile dir. Use a pathh to the compile dir in
your php configure.

This is mine, works a treat - b.t.w., you should compile c-client with
SSL (read the imap BUILD docs):

CPPFLAGS="-I/u/uxinstl/imapd/imap-2002a.DEV.SNAP-0212051126 \
-I/usr/local/mysql" LDFLAGS="-L/u/uxinstl/imapd/imap-2001a/c-client \
-L/usr/local/mysql" ./configure \
<big snip>
--with-imap=/u/uxinstl/imapd/imap-2002a.DEV.SNAP-0212051126
