I had similar problems on a different configuration. Horde, MySQL, Cyrus-IMAP, 
Pam_mysql, saslauthd, MailScanner, Spamassasin, ClamAV. It took me weeks to 
track it down: It looks like some pam_modules have memory leaks and saslauthd 
starts to increase memory consumption. Restarting saslauthd daily was the 
workaround, staring saslauthd with the -c FLAG solved. Maybe this is your 
problem?
