Cyrus is a great IMAP server if you have a lot of users or need some 
complex features (virtual domains, for example).  It is extreme overkill 
if you are setting up a small mail server of less than a couple hundred 
users.  I've heard good things about Dovecot, but I have no experience 
with it myself.
