Hey
1. Sorting
Click on the bar in the message list area. if you click the little arrow
you get choices.
click on date to sort by date click on subject to .... and so on.
2. appointment colors
I have never used to mark appointments that way. So I am not sure you can.
That I would have to test or someone more experienced could say something
about this.

Goto preferences -> e-mail -> e-mail templates
add a new template -> make up the template as you wish.
When you wan't to use it.. klik on template folder in the folder list ->
open the template you want to use.
and write your mail.
