Try "tcpdump -i lo -w tcp.log port imap" if your web and imap server are 
both on localhost. All ip traffic on the imap port will then be logged to 
tcp.log. This is binary data but you easily see the plaintext imap commands 
in it.

I wasn't able to find out what php/c-client does because my imap server 
only talks cram-md5.
