Doh! Silly me. I'm using the wps_sober theme and made the following
edit to the imp/themes/wps_sober/screen.css file:

   .folderunsub {
       font-style: italic;
+      background-color: #DEE8F8;
   }

This makes the unsubscribed folders look light-blue, the same as
unseen messages. Perfect.
