What you want is a from_addr hook. Look in horde/config/hooks.php.dist  
for _prefs_hook_from_addr, then put a suitably customized hook into  
your live horde/config/hooks.php file, and set 'hook' => true in the  
from_addr preference in horde/config/prefs.php.
