BTW

and how do you "pear upgrade" for ALL packages while review which of them
are updated to which version and exclude single-packages like
"yum --exclude=\*horde update"

sorry, but you can not believe PEAR is a valid replacement for a systemwide
package-manager with transaction-checks, dependency-tracking and many
other things you can do with yum/creatrepo
