Well, looks like this has fixed it... :)

I didn't have to regenerate the account, just updated the server, and the devices appear to have started correctly updating. 

Thanks Mike for your persistence! I will monitor and run some proper tests on the weekend. 

I am having a couple of other strange issues at the moment (e.g. When my wife adds a contact on her iPhone, her entire contacts list disappears and resyncs minus the new contact) but will generate some logs and post separately.
