That should be fine. When you configure the Horde/Exchange account 
settings in TBSync, it creates a new calendar (and/or address book - you 
can select to sync the calendar and/or the address book) for the 
Exchange/ActiveSync account. Then it downloads all the appointments 
and/or contacts you have on the server.

Yes - all contacts and appointments you add to Thunderbird, in the 
corresponding calendar or address book, get synced back to the back-end 
by TBSync when a connection to the back-end is available.

If there is an ActiveSync/Exchange client for calendar/address book for 
Nokia N810, then you should be able to.
