[turba] how to simplify my turba upgrade process

Correct, all the *.sql script does is create the tables.

Sure. If you want indexes on your custom tables, you should create them.

Yes. Before you use Turba, your source must be configured in sources.php.
all i would have done

Yes. That script only creates the tables.
